This dish has roots that go back to a curry house called Indeira in Shibuya, Tokyo. It was Mr. Idei, the first proprietor of Okayama Indeira, who brought this dish and its flavors to Okayama. Since its establishment in 1966, the restaurant has consistently maintained the original taste and flavor, which has now become one of Okayama’s most popular Western-style dishes. With fried rice-style blackened rice and a slightly sweet and distinctively fragrant sauce, this dish is definitely moreish, and is based on a secret spice and caramel sauce recipe.
